Why Baking Is Different from Cooking
Cooking is forgiving. You can throw in an extra handful of onions, eyeball the olive oil, and adjust seasoning on the fly. Baking does not work that way. It is applied chemistry: flour, fat, sugar, eggs, leavening and liquid interact in precise ways, and altering one element shifts the entire outcome. A tablespoon too much flour produces a dry, dense cake. Too little sugar and your biscuits won't brown properly. Understanding why each ingredient matters is the single most important step for any beginner baker.
This guide covers everything you need to know to bake confidently at home, from choosing the right flour to troubleshooting a sunken sponge.
Understanding Flour Types
Flour is the structural backbone of almost every baked good, and not all flour behaves the same way. The critical variable is protein content, which determines how much gluten forms when the flour is mixed with liquid.
Plain Flour (All-Purpose Flour)
Plain flour has a moderate protein content of around 10-12%. It is the workhorse of the home baker and works for biscuits, scones, pancakes, some cakes and thickening sauces. In the UK, this is labelled "plain flour." In the US, it is "all-purpose flour." In Australia, look for "plain flour" as well, though the protein content can vary slightly between brands.
Self-Raising Flour
Self-raising flour is plain flour with baking powder already mixed in, typically at a ratio of about 1.5 teaspoons of baking powder per 150g of flour. It is convenient for quick cakes and sponges but should not be used in recipes that call for plain flour unless you adjust the leavening. If you run out, make your own: for every 150g plain flour, sift in 1.5 teaspoons of baking powder.
Strong Bread Flour
Bread flour has a higher protein content of 12-14%, which creates the strong gluten network needed for chewy, well-risen bread. Using plain flour for bread will give you a flatter, denser loaf. Some supermarkets in the UK label this "strong white flour" or "very strong bread flour."
Cake Flour
Cake flour has a low protein content of around 7-9%, producing tender, fine-crumbed cakes. It is more commonly sold in the US. In the UK, you can approximate it by replacing 2 tablespoons of plain flour per 150g with cornflour, then sifting the mixture three times.
Wholemeal Flour
Wholemeal (whole wheat in the US) flour contains the entire grain, including bran and germ. It absorbs more liquid than white flour, so recipes need adjustment. A good starting point is to use 75% wholemeal and 25% plain flour, adding an extra tablespoon of liquid per 150g of wholemeal flour.
Leavening Agents: What Makes Things Rise
Baking Powder
Baking powder is a complete leavening agent: it contains both an acid and a base (bicarbonate of soda), plus a buffer (usually cornflour). It activates twice, once when mixed with liquid and again when heated. Most baking powder in the UK is "double-acting." Use about 1 teaspoon per 150g of flour for a standard sponge.
Bicarbonate of Soda (Baking Soda)
Bicarbonate of soda is pure sodium bicarbonate. It needs an acid to activate, which is why recipes using it also include buttermilk, yoghurt, lemon juice, treacle or brown sugar. It is roughly three times as powerful as baking powder, so you use much less. Too much bicarb leaves a soapy, metallic taste. A typical amount is 0.5 teaspoon per 150g of flour.
Yeast
Yeast is a living organism that ferments sugars to produce carbon dioxide gas and alcohol. The gas gets trapped in gluten networks, causing dough to rise. Dried active yeast needs to be "bloomed" in warm water (around 37-43C) before use. Instant (fast-action) dried yeast can be mixed directly into flour. Fresh yeast, which you can sometimes get from bakery counters, is used at roughly double the weight of dried yeast.
Eggs as Leaveners
Whipped eggs, especially egg whites, trap air that expands in the oven. This is the primary leavening in sponge cakes, chiffon cakes and souffles. Room-temperature eggs whip to a greater volume than cold ones, and even a trace of yolk fat will prevent whites from forming stiff peaks.
Measuring Ingredients Properly
Inaccurate measuring is the number one cause of baking failures at home. There are two approaches.
By Weight (Recommended)
Digital kitchen scales are the most reliable method. Weigh everything, including liquids. Water, milk and most thin liquids weigh approximately 1ml per 1g, so 200ml of milk is about 200g. Invest in scales that read to at least 1g, preferably 0.1g if you bake bread regularly and need to measure small quantities of salt or yeast.
By Volume
If using cups and spoons, spoon dry ingredients into the measuring cup and level off with a straight edge. Never pack flour into a cup (unless the recipe says so for brown sugar). A "cup" of flour can vary from 120g to 160g depending on how it is scooped, which is why weight is always more reliable.
The Spoon-and-Level Method
For flour measured by volume, stir the flour in the bag to aerate it, spoon it gently into the measuring cup, and level the top with the back of a knife. This gives roughly 125g per cup, which is the standard most recipe developers use.
Oven Temperature and Calibration
Home ovens are frequently inaccurate by 10-20C, sometimes more. An oven thermometer (available for a few pounds from any kitchen shop) is an essential purchase. Place it in the centre of the oven and check it against the dial setting.
Common Baking Temperatures
- Low and slow (120-140C / Gas Mark 1-2): Meringues, slow-dried fruit
- Moderate (160-170C / Gas Mark 3-4): Rich fruit cakes, cheesecakes
- Standard (180C / Gas Mark 4-5): Victoria sponge, muffins, most biscuits
- Hot (200-220C / Gas Mark 6-7): Scones, puff pastry, bread
- Very hot (230-250C / Gas Mark 8-9): Pizza, some artisan breads
Fan Oven Adjustment
Fan (convection) ovens circulate hot air, cooking food faster and more evenly. Reduce the temperature by 20C from a conventional recipe. So a recipe calling for 180C conventional should be set to 160C fan. Most modern UK ovens are fan ovens, so check whether the recipe specifies "fan" or "conventional."
Rack Position
For most baking, use the middle rack. Placing items too high browns the top before the centre cooks through. Placing them too low can leave the top pale while the base burns. For bread, the lower-middle position often works well as it gives a good base crust.
Essential Techniques Every Baker Should Know
Creaming Butter and Sugar
This means beating softened (not melted) butter with sugar until the mixture is pale, fluffy and increased in volume. This takes 3-5 minutes with an electric mixer or 8-10 minutes by hand. The process traps air bubbles in the fat, which expand during baking and contribute to a light texture. The butter should be at about 20-22C: soft enough to dent with a finger but not greasy or melting.
Folding
Folding is a gentle mixing technique used to combine a light mixture (like whipped egg whites) with a heavier one (like cake batter) without deflating the air. Use a large metal spoon or spatula. Cut down through the centre of the mixture, sweep along the bottom of the bowl, and bring the spoon up and over the top. Rotate the bowl a quarter turn and repeat. It should take about 15-20 strokes. Some streaks of unmixed batter are preferable to a deflated mixture.
Rubbing In
Used for scones, shortcrust pastry and crumbles. Cut cold butter into small cubes, add it to the flour, and rub the pieces between your fingertips until the mixture resembles fine breadcrumbs. Work quickly to keep the butter cold. If your hands run warm, rinse them under cold water and dry thoroughly before starting.
Blind Baking
Blind baking means pre-baking a pastry case before adding the filling. Line the pastry with baking parchment, fill it with ceramic baking beans or dried chickpeas (saved and reused for this purpose), and bake at 190C for 12-15 minutes. Remove the beans and parchment, then bake for a further 5-8 minutes until the base is dry and lightly golden. This prevents a soggy bottom in tarts and quiches.
Common Baking Mistakes and How to Avoid Them
Dense or Heavy Cakes
Usually caused by too much flour, not enough leavening, or insufficient creaming. Measure flour by weight, not by scooping with a cup. Ensure your baking powder is fresh; it loses potency over time. Test it by dropping a teaspoon into hot water. If it fizzes vigorously, it is still active.
Cakes That Sink in the Middle
Opening the oven door during the first two-thirds of the baking time lets in a rush of cool air that can collapse the structure. Resist the urge to check until at least 75% of the suggested baking time has passed. Other causes include too much sugar, too much leavening (the cake rises too fast and then collapses), or underbaking.
Tough Biscuits or Scones
Overworking the dough develops too much gluten. Mix or knead only until the dough just comes together. For scones especially, a few lumps are fine. Pat the dough to thickness rather than rolling repeatedly.
Dry Bakes
Overbaking is the most common culprit. Start checking 5 minutes before the recipe's suggested time. A skewer inserted into the centre should come out with a few moist crumbs clinging to it, not completely clean (the residual heat will finish the job). Also check that you have not used too much flour.
Burnt Bottoms, Pale Tops
Your oven runs hot at the base, or you are using a dark-coloured tin that absorbs more heat. Switch to a lighter-coloured or anodised aluminium tin, or place a baking sheet on the rack below your tin to diffuse the heat.
Essential Baking Equipment
You do not need a kitchen full of specialist equipment to bake well, but a few items make a significant difference.
Must-Have Items
- Digital scales (accurate to 1g)
- Mixing bowls (at least two, one large and one medium)
- Measuring spoons (a proper set, not cutlery spoons)
- Oven thermometer
- Wire cooling rack (bakes that cool in the tin continue cooking and can become soggy on the base)
- Baking parchment (not greaseproof paper, which can stick)
- Two round 20cm sandwich tins (for layer cakes)
- A large baking tray
- A 900g/2lb loaf tin
Nice to Have
- Stand mixer or hand-held electric mixer (saves considerable time on creaming and whisking)
- Silicone spatula (for scraping every last bit of batter from the bowl)
- Pastry brush (for egg washes and glazes)
- Rolling pin (a straight, handleless French-style pin gives the most control)
- Dough scraper (invaluable for bread baking and cleaning work surfaces)
Your First Bake: Victoria Sponge
The Victoria sponge is the ideal starter recipe because it uses the creaming method and has a simple 1:1:1:1 ratio that scales easily: equal weights of butter, sugar, self-raising flour and eggs.
For a standard two-layer cake: use 200g each of softened unsalted butter, caster sugar, and self-raising flour, plus 4 medium eggs (which typically weigh about 200g without shells). Add 1 teaspoon of vanilla extract and a pinch of salt.
Cream the butter and sugar for 4-5 minutes until pale and fluffy. Beat in the eggs one at a time, adding a tablespoon of the flour with the last egg to prevent curdling. Fold in the remaining flour gently. Divide between two greased and lined 20cm tins and bake at 180C (160C fan) for 22-25 minutes. Cool in the tins for 5 minutes, then turn out onto a wire rack.
Once cool, spread one layer with raspberry jam and whipped double cream, place the second layer on top, and dust with icing sugar.
Building Confidence as a Baker
Start with simple recipes and make them several times before moving on. Repetition builds muscle memory and helps you understand how the dough or batter should look and feel at each stage. Keep a baking notebook: jot down what you changed, what the result was, and what you would do differently next time. Baking is precise, but it is also deeply personal, and the more you practise, the more instinctive the adjustments become.
